Gaeng Tai Pla (Southern Style Curry with Fish and Vegetables)

Curry paste ingredients
10 dried hot Chilli
8 chili peppers
2 tablespoons of garlic
1 tbsp shallot
2 tablespoons of lemongrass
2 teaspoons of turmeric
1 tablespoon galangal
1 teaspoon bergamot
2 teaspoons of pepper
2 teaspoons of shrimp paste

other ingredients
¼ cup fish kidneys
1 cup water
2 teaspoons of galangal
2 teaspoons of lemongrass
2 kaffir lime leaves
1 cup water
1 cup sweet potatoes
¼ cup eggplant
¼ cup small eggplants
¼ cup bamboo shoots
1 stalk of kaffir lime leaves
1 tbsp chilli
Mackerel 150 g

seasoning mix
1 tbsp sugar
2 teaspoons of lemon juice


Pound all curry paste until fine.

Boil fish kidney with kaffir lime leaves, lemongrass, galangal. Strain only water.

Boil water with curry paste. Add fish kidney soup and seasoning mixture.

Add sweet potatoes, Thai eggplants, baby eggplants, bamboo shoot, kaffir lime leaves, spur chilies, and mackerel. When boiling, lift from heat.
