Soup Nor Mai (Bamboo Shoot Salad Northeastern Style)
Chicken wings 120 Grams
Lemongrass 2 Tablespoons
Shallots 2 Tablespoons
Hot chilies 5 Dills ¼ Cup
Spring onion¼ Cup
Cabbages ¼ Cup
Thai Eggplants 2 Sweet basils ¼ Cup
Stock 1 Cup
Fish sauce 2 Tablespoons
Fermented fish stock 1 Tablespoon
Take bamboo shoots and wash them thoroughly. Then bring it to a boil and pour the water 2-3 times to make it odorless and sour. Then set aside
Mix bamboo shoot with seasoning mixture , sawtooth coriander, shallot, and sesame until well mixed.
When served, sprinkle with spring onion, mint leaves and coriander leaves.
Season with chili powder, fish sauce, lime juice, fermented fish juice and roasted rice to mix well. Then add mint leaves, parsley and shallots, mix well. Ready to serve
Put the bamboo shoot soup on a plate. Sprinkle with chopped scallions, mint leaves and roasted rice, and it's done.
